Vasiliki Kachrimanidou is an Agronomist-Food Scientist graduated from the Department of Food Science and Technology at the Agricultural University of Athens(AUA). She obtained her PhD from the Department of Food Science and Human Nutrition (AUA). The PhD thesis focused on the development of biorefinery concepts for the microbial production of poly(hydroxyalkanoates) and value-added products using by-product streams from sunflower-based biodiesel production. Her research interest is focused on the design and development of biorefinery concepts to valorize renewable resources, including agro-industrial and food industry by-products and side streams to generate high added value products. After completion of her PhD, she moved to the University of Reading in the Department of Food and Nutritional Sciences as post-doctoral research associate, under the supervision of Professor Bob Rastall in close collaboration with Professor Glenn Gibson. The project implemented the development of targeted prebiotics and novel synbiotics that would selectively stimulate the growth of specific lactobacilli strains and confer beneficial effects on gut microbiome. Subsequently, she moved to the Department of Food Science and Technology (Ionian University) to engage in post-doctoral research regarding the development of chemical, biological and enzymatic processes for the valorization of food industry waste streams to formulate value-added products, focusing primarily on compounds that can be employed for the development of novel and functional food products. Her research interests also include techno-economic evaluation and life cycle analysis of the designed bioprocess to evaluate the feasibility and sustainability of the proposed scenarios within the concept of transition to circular economy. Dr Kachrimanidou has participated in 10 research projects, possesses teaching experience whereas she has 36 publications in peer reviewed journals, 6 book chapters and 35 participation in international conferences.
